So I am all kinds of proud of myself. I made dinner last night. That alone is enough for me to be proud of. Domestic I am not.

…..I will pause a moment until the applause dies down…..

I have been craving autumnal cold weather peasant type meals and I had already worked my way through my meager repertoire so I took a quick spin around the interwebs and unearthed a recipe for Irish Chicken Stew. After giving it a looksee I set off to go hunting (that’s what I tell the cat I am doing…no really I do) at the grocery store. fifties-housewife_grocery

Well I did it. I made it. The pièce de résistance? Dumplings on the top! Fresh hot doughy delicious freaking dumplings!

I should have taken a picture. Yeah, I didn’t. But I can now add it to my list o’ dishes and perhaps if I make it again sometime I will take a pic and add it to this random post.

In case any of you are so moved to give it a try (it was easy) here’s the general recipe.

Irish Chicken Stew with Dumplings
2 cans condensed cream of chicken soup (10.75 ounce)
3 cups water
1 cup chopped celery
2 onions, quartered
1 teaspoon salt
1/2 teaspoon poultry seasoning
1/2 teaspoon black pepper
4 skinless, boneless chicken breasts
5 sliced carrots
1 package frozen green peas (10 ounce)
4 potatoes, quartered
3 cups baking mix
1 1/3 cups milk

In a big, heavy pot, combine the soup, water, chicken, celery, onion, salt, poultry seasoning, and pepper. Cover and cook over a low heat about 1 1/2 hours. Next add potatoes and carrots; cover and cook about 30 more minutes.

Remove chicken, shred it (like you are making pulled barbecue…something else I can make believe it or not), and return to the pot. Add peas and cook 5 minutes.

You add the dumplings next. To make them mix baking mix (I used Bisquick) and milk until a soft dough forms. Bring the stew to a boil (must be boiling) and drop the dough by the tablespoonful on top. Simmer covered for 10 minutes. Then uncover and simmer about 10 more minutes.

Serve it up and listen to the praise.

  1. That’s very funny! I should have got a picture like that to go with my last post. It positively reeks of domesticity.

    Hm. No matter how much you put “positively” in front of it, “reeks” reeks of negativity.

    Anyway F it. You may justly revel in your culinary triumphs! And next time please do take a picture. I always thought it would be hilarious for me to do a photo-recipe blog of all my worst-looking best-tasting go-to dishes. Sometimes I come out with something end it just ends up looking really off-putting, yet the scents and flavors – ah! Manufeek!

    It’s not that I am inattentive to matters of presentation. It’s only that, as a visual artist, I tend more towards a confrontational aesthetic.

  2. My husband and I went through a phase where we took a photos of all of our meals. We took turns cooking and then snapped a photo of our finished products and it sounds eerily like the blog you describe there. When I look back through the pics they truly look gross, but mmm mmm they were delicious meals.

    I even shot a series of photos once as I made fajitas and did a crude animation at the end just because it amused me. I’ll root around and see if I can dig that thing up.

    Yup next time I will definitely have to a take a picture. I have a couple other meals planned this week that have true ugly picture potential so perhaps I will snap those also.

  3. Mmmm….this sounds delicious. Do you think I could throw it in the crock pot?? Crock pots make me happy.

    When Brent cooks, he takes pictures. He also have one youtube video about making shrimp. I’m just not that organized. When I’m cooking, I’m cooking. I can never find my camera anyways lol.

  4. I was thinking the same thing! Trying it in the crock pot. (the crock pot makes me happy also..my FAVORITE way to cook).

    The only time it might get a bit dicey is the dumplings at the end. But usually towards the end of my crock pot cooking, when I do soup or stew, it is boiling so I think it just might work. If I brave it I will report back how it turns out.

    I do actually have pics of this dish that I intend to post on here with an update if I ever get them off of the darn card. Maybe that will happen today. I also have pics of the chili and pea soup which I will probably post as well.
